  • 1/4 cup granulated sugar
  • 1/4 cup raspberry liqueur or juice
  • 1 Β½ cups strong brewed coffee (cooled)
  • 1618 ladyfingers (savoiardi)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • Cocoa powder (for dusting)

Instructions

  1. Prepare the Raspberry Mixture:

    • In a small bowl, toss the raspberries with granulated sugar and raspberry liqueur or juice. Set aside to macerate for 15 minutes.
  2. Make the Cream Filling:

    • In a mixing bowl, beat the mascarpone, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  3. Assemble the Layers:

    • Dip ladyfingers briefly into the cooled coffee and arrange a layer at the bottom of your serving dish or individual glasses.
    • Spread a layer of the mascarpone cream over the ladyfingers.
    • Scatter macerated raspberries on top of the cream.
    • Repeat layers until the ingredients are used, finishing with a layer of cream.
  4. Chill:

    • Cover and refrigerate for at least 4 hours or overnight to set and allow flavors to meld.
  5. Finish and Serve:

    • Before serving, dust the top with cocoa powder and garnish with fresh raspberries.
