Ingredients

Scale

📋 Ingredients

  • 2 lbs potatoes (Yukon gold or red, peeled and diced)
  • 1 cup Hellmann’s mayonnaise
  • 2 tbsp white vinegar
  • 1 tbsp yellow mustard
  • 1 tsp sugar
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup celery (chopped)
  • 1/2 cup onion (finely chopped)
  • 2 large hard-boiled eggs (chopped, optional)

Instructions

  1. Cook the Potatoes:

    • In a large pot, add diced potatoes and cover with cold water. Bring to a boil and cook until just tender, about 10-12 minutes.
    • Drain and let cool completely.
  2. Prepare the Dressing:

    • In a large mixing bowl, whisk together Hellmann’s mayonnaise, vinegar, mustard, sugar, salt, and pepper until smooth.
  3. Assemble the Salad:

    • Add cooled potatoes, celery, onion, and hard-boiled eggs (if using) to the dressing. Gently fold to combine, ensuring the potatoes are well coated.
  4. Chill and Serve:

    • Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
